Chickpea Curry with Chicken and Cauliflower

Fighting a cold? Then you have to give this Chicken, Cauliflower, and Chickpea Curry recipe a try.

 

When I feel the sniffles come on, this is my go-to dish.

 

It must be the combination of spices (but not too spicy- I’m a wimp!) and the high nutritional value of this dish that really helps shorten any cold that comes my way.

That’s because this dish has many of the top superfoods working in your favor. From ginger to rainbow chard, it’s basically the who’s who in the vitamin and mineral world.

 

So grab your hot tea and start cooking some Chickpea Curry!

 

Chickpea Curry

Chicken, Cauliflower, and Chickpea Curry

 

Ingredients

2 chicken breasts

1 tbsp. coconut oil (or other neutral oil)

1 medium red onion, diced

1½ tbsp. curry powder

2 bay leaves

2 tsp. ground ginger

2 cloves garlic, minced

1 small jalapeno, seeded and minced

3 cups small cauliflower florets

1 cup 1/2-inch diced red potatoes

2 tsp. of sea salt

1 tsp. ground black pepper

1 (28- oz.) can crushed tomatoes

1 cup vegetable stock, divided

1 cup cooked chickpeas

1 bunch rainbow chard, stems removed and chopped

Cooked quinoa

Siggi’s plain yogurt (optional garnish)

 

Directions

Prep time: 30 minutes – Cooking time: 1 hour – Serves: 4 to 6

  1. Sear chicken on both sides, remove from heat and dice into 1-inch cubes. Set aside.
  2. Heat oil in a large soup pot over medium heat. Add onion and cook for about 5 to 6 minutes, or until very soft.
  3. Add curry powder and bay leaves; cook for 3 minutes, stirring often.
  4. Add ginger, garlic and jalapeño; cook for 2 to 3 minutes, constantly stirring.
  5. Stir in cauliflower, cooked chicken, and potatoes. Season with salt and pepper.
  6. Add crushed tomatoes and stir again. Add 1 cup stock; cover and bring to a boil. Lower heat to a simmer and uncover.
  7. Cook for about 40 minutes or until potatoes are just tender.
  8. Add chickpeas and chard; simmer for 5 more minutes or until greens have wilted.
  9. Serve over cooked quinoa. Add Siggi’s yogurt if you like it a little creamy.

 

I know Chicken, Cauliflower, and Chickpea Curry has a few more steps than most of the dishes I suggest, but trust me, it’s worth it.

 

The taste is amazing and you’ve got all the key nutrients to nip that cold in the bud.

All that is left to do is climb into bed and get some sleep. Feel better!
