Among Friends Protein Pancakes

Does anyone else smile when they hear the words protein pancakes? It’s like two amazing things in one.

But I have to admit, not all protein pancake mixes are created equal. I ’ve had some that taste chalky and just a little off.

While scrolling through Instagram recently, I found a picture of a beautiful stack of pancakes.

 

Of course, I stopped to learn more and found they were Among Friends Protein Pancakes

 

When I read it has 14 grams of protein per serving and is gluten-free with no fillers, I had to give it a try.

Last weekend I mixed up a batch and they were amazing. I’m seriously in love.

Even my husband, who is not a health food nut, and most definitely an IHOP loyalist, gave these pancakes two thumbs up.

 

I instantly knew I had found a real winner.

 

Besides the awesome taste, the thing I loved the most about these pancakes is I didn’t feel bad after enjoying a nice little short stack. Many times after pancakes, I’ll feel the drag of too many carbs and that horrible bloated feeling.

Even worse, I’ll even feel this weird hunger a few hours later. Like I ate too much, but my body doesn’t feel satisfied that it got what it needed.

 

But that’s not the case with the Among Friends brand. I felt good. I felt happy. I felt the way you should after a yummy brunch!

 

Another thing that is great about pancakes is you can customize them to your taste.

For mine, I added a little vanilla into the mix. But you can easily add in almond butter, fruit, or pumpkin pie spice (that is definitely happening with the next batch).

Here’s the recipe for eight 4” pancakes

Ingredients:

1.5 cups of Among Friends Patrick’s Protein Pancake Mix

1 Egg

2 tbsp of butter

2 tsp of vanilla

1 cup of buttermilk (Tip: If you never use buttermilk, don’t buy it for this. Make your own. Just put 1 tablespoon of apple cider vinegar or lemon juice into the cup of milk or almond milk. It sours the milk and works great!)

 

Directions:

Melt the butter and cool

In a large bowl combine pancake mix and all the wet ingredients

Mix until the batter is free of lumps

Pour ¼ cup of the batter onto a preheated, oiled griddle or pan and cook until the edges begin to dry and bubbles break on the surface (approximately a minute)

Flip and cook until golden brown on both sides.

Serve with maple syrup or drizzle almond butter on top.

So easy!!

 

And these pancakes aren’t only for the weekend.

 

I made extra and saved them in the fridge. Monday morning, I toasted them in my toaster, just like a piece of bread, and enjoyed them before I rushed off to work. They were so yummy and the perfect way to beat the Monday blues.

That’s the great thing about the Among Friends brand. They use real ingredients, so you know you are getting something good. These pancakes don’t just have to be a weekend indulgence.

Two, 4-inch pancakes are only 170 calories, 14 grams of protein, and only 3 grams of sugar.

 

Digging around the Among Friends website, I noticed they have a long line of other mixes, including cookies, cakes, brownies, and muffins. As I mentioned, you can get everything online, but they are also sold in stores, including Target and Safeway.

You know their Double Chocolate Cookie Mix is on my grocery list for two reasons:

 

  1. I’m obsessed with cookies… Duh
  2. Among Friends was just named “Best Dessert for Runners” by Runner’s World Magazine.

 

So I highly recommend giving Among Friends a try.
